Barbera is a type of grape from Italy and we grow it in the hills near Sacramento, where I live. These grapes were grown at around 1200 meters altitude. It gets a little hot and can be very cool at night.
After the grapes have finished fermenting in the yeast, the sugars have been turned into alcohol.
Now we put them in the crusher and start squeezing out all of the juice. In the end we have the “Cake”, what you see here. Can you imagine this was 70 kg of grapes and now it looks like a big cake. We keep the grape juice and throw away the cake.
